I had some challah leftover from the challah and cherry panini, I posted this about two weeks ago and hopefully you checked it out and even more so, you actually made one for yourself. It’s certainly not difficult and completely worth your time and energy. After making the challah and cherry panini I had plenty bread, cherries and goat cheese leftover. I’m sure you’ve heard me go on and on about waste and bad management. I think it’s a crime to just throw away food and be wasteful or just lazy.
It’s times like these when I hate myself. I was talking with a coworker that asked me “don’t you just hate these people?” To which I thought, I jokingly say I hate someone but I don’t really hate anyone. Hate is a strong word and I prefer not to use it. I will use it, but I prefer not to.
I always thought it was a beautiful idea to support local businesses and I do. It’s just that convenience is so….convenient.
Another addition to the sconer of the month club, an eggnog scone to keep with the Christmas Season. I like the idea of eggnog, Christmas, ugly sweaters, decorations and seeing family you rarely get to see, it’s just that I’m not a big fan of drinking dairy. My family is not eggnog drinkers as well, we just go straight for the booze. Maybe if I got a big hunk of chocolate cake or cookies I’ll chase it with milk, usually it’s coffee, but I could do milk. Why do I feel the need to explain myself?
Here is the roasted pineapple recipe. You can make this and store it in the fridge for the week. Finely chop it and use it in cakes or what not. Put it on toast in the morning or on a bagel with some cream cheese…Yummy! It’s great stuff, I keep this in the fridge myself. It really livens up a lot of dishes, including savory. Try it with some chicken and rice or on a pizza. It’s awesome!!
I am a big fan of cherries and think they are best just the way they are. I can grab a bag from a vendor on the corner, sit in the park and kill a day people watching. One of my favorite things to do. Unfortunately, most desserts made with cherries are cooked to death or with a ton of sugar or booze. It totally kills the cherry and I don’t understand why you would do it. Now, cherry pie… that’s different. Don’t argue with me. Remember McDonald’s cherry pies?? Oh man!!
Remember when I made the Duncan Hines vanilla frosting ice cream cake? Well, I had some left over frosting mix and was debating what to do with it. I usually have leftovers because I can’t throw anything away, thanks mom and dad, but it also forces me to be creative, thanks mom and dad. I have worked in so many kitchens that just simply throw product away. Drives me nuts, that’s throwing away money and says you’re not good at managing things. Plus, so many positive and successful things have come from making mistakes and making it work. That’s why my parents have been married for over 40 years and raised three wonderful guys. It’s beautiful!!
