I made this a while back and paired it with a stout ice cream and pretzels. It was damn good too! Being a dick and thinking I was too cool to put up recipes, I neglected you all and for this I apologize. So here now I am posting the recipe. Why I waited so long is probably unforgivable since it’s probably the best recipe I’ve come across in ages.
Not too long ago I picked up a part time job on the weekends just for kix. I found a place on the upper east side that just needed someone on the weekends to crank out scones. Easy enough and they are mad cool and let me do whatever I want. Obviously.
Can I still call them key lime pies if I didn’t use key limes?? I have a love hate relationship with key lime pie. I want to love it for its sweet and creamy beautiful texture but I want to hate it because there is nothing too it. I especially hate when people put the green food coloring in. Stop it!! That all changed when I started working in Florida and the pastry chef I worked for used honey meringue on the key lime. It blew my mind and I was starting to like key lime pie again.
