Here we go again with the sweetened condensed milk. Yup, I love it. Now shut up and listen. This stuff couldn’t be easier or more yummy. It’s rich, creamy, smooth and you just wanna, YEAH! What is ice cream? Seriously, what is ice cream? I took an ice cream class with this hard core Italian guy. I don’t really remember the ice cream formula, all I remember was the instructor had thick black hair, Armani suits and one bad ass accent. I wanted to be him, that’s all I thought about and didn’t take one note about ice cream. Damn it!! Sometimes I wonder if I’ll grow up?
Here is the cider caramel again. This time really getting the attention it deserves. This whole dessert came together while I was working at Mapuyampay in Chile. The pecan cake, which actually Ruth used walnuts, and the date ice cream I saw in a cookbook in Chile as well.
One day I want to have a cookbook called “Demolicious”. It will be a collection of all the recipes I’ve dreamed up and attempted, that in my mind sounded out of this world but ended up on the cutting room floor. This dessert will be in that book.
In September of 2010 I went to Sao Paulo to visit my beautiful amazingly cool greatest friend Michel. Michel is an awesome guy, great friend and over the top talented. I love me some Michel!! I was originally scheduled to go see my friend Ruth in Chile, but due to the earthquake, things got shifted around and I diverted my flight over to Brazil. A disaster turned into a positive.. a BIG positive.
