Banana Breads good and we all agree with that. Bread right out of the oven with a slather of butter and a cup of coffee. Can’t go wrong?
But it’s a bit dated and boring. You wouldn’t bring it to a party and it wouldn’t get you out of your seat if you saw it from across the room.
However, the Whole Wheat Banana Cake with Dark Chocolate Ganache? That turns heads and gets people talking. As it should.
Banana is familiar and loved by most people. It’s available all year long and it’s that one fruit that becomes ripe right under your nose. Then what?
Banana Bread the old standby. Not anymore. You’re changing all that.
The Whole Wheat Banana Cake is much more lighter and fluffier. It has much more depth of flavor and character.
Thanks to the Whole Wheat flour and buckwheat honey.
It holds its own and keeps its integrity against the dark chocolate ganache.
If the ganache is a little too much for you the classic buttercream recipe is always a winner.
Not to mention banana also compliments well with coffee. As with the coffee buttercream.
Feel free to make this cake recipe your own.
Use more floral honey’s or regular all purpose flour.
I’m a big advocate for using booze. So if you feel feisty you could reduce some of the water and replace it with the booze of your choice. A honey whiskey perhaps?

Whole Wheat Banana Cake
Makes 1 – 8” round cake
2 whole Bananas
80g vegetable oil
3 whole eggs
250g whole wheat flour
5g baking soda
3g baking powder
7g vanilla extract
50g Buckwheat honey
-combine the bananas with the sugar and mix with the paddle until smooth and combined.
-add your oil, water, honey, vanilla and eggs and mix just until combined.
-add your whole wheat flour, baking soda and baking powder. Mix just until the mixture comes together and is smooth.
Pour mix into your buttered baking pan. Bake at 350 degrees for approximately 40-45 minutes. Baking times always vary so be sure to check half way through.
Notes: If you don’t have buckwheat honey. It’s OK. You can replace it with whatever honey you have on hand. You won’t get same depth of flavor but it will not alter the cake in any other way.
Dark Chocolate Ganache
250g. Dark Chocolate
300g. Heavy cream
-have your chocolate in a mixing bowl
-bring cream to a boil and pour over your chocolate. Let sit for 2 minutes
-using a spatula start mixing the chocolate and cream mixture from the center working outwards.
-mixture will slowly come together and you should have a smooth chocolate mixture
-slowly incorporate your butter
-cover with plastic wrap and let sit on kitchen counter until set.
I usually make my ganache the day before. If you don’t have the time. Pour your ganache out into a casserole dish or baking sheet to coolk faster.
I don’t recommend the fridge. Your ganache will get too hard and you won’t get a smooth enough consistency to frost your cake.
If you place your cake in the fridge after you have put on the ganache. Let it come to room temperature before eating to give the ganache time to soften up. It’s much better that way. I think.
