Myself and my 17th closest friend James decided to get together a do a little collaborating. James knows wine like nobodies business and I know food like… anyway James knows what he’s doing.
I will be the first to admit that I am not a wine guy. I love to drink wine and I’ve taken classes. That’s about the extent of it. I am not a connoisseur whatsoever.
I drink champagne with Doritos.
This is why people like my friend James fascinate me. James can pick a bottle of wine and sell you on it, no problem. He hits all the notes and fragrances and can pair a wine with food flawlessly.
James sips a glass of wine, makes a lot of noise, takes a step back, gets deep into thought. Then we collaborate and cook up some dishes.
When we taste the wine with the dish, it blows my mind. I always thought it was so cool that a wine can be totally transformed by food. Again, James is a master at this.
When James suggested a mixed green salad with a lemon vinaigrette, I didn’t think something so simple would really make a difference. Wrong as usual.
We call this the Above Average Lemon Vinaigrette because the lemon is a little more than a usual vinaigrette would be but it works for this wine. James can explain better than I can.
James:
Uno de Mil is a tasty wine from producers Dominio de Punctum Organic Estate and Winery, located in the DO Castilla L a Mancha (between Madrid and Valencia). These biodynamically grown grapes see about 6 months oak barrels and 1 day maceration on the skins, which gives a little spiciness, honeyed notes and its beautiful slight amber hue to the wine. Beautiful notes of apricot, pineapple, honeysuckle, orange and bruised apples with some crispness, is the perfect accompaniment to a citrus vinaigrette salad, as prepared by Justin. It can also go well with some flaky white fish, like cod or halibut or even some lightly sautéed chicken.

1/2c Lemon juice
1/2c Olive Oil
1 bulb garlic
1tsp honey
1tsp dijon mustard
salt and pepper to taste
-place everything in a blender and whirl away until smooth and delicious!!
