Roasted Pineapple

IMG_1370Here is the roasted pineapple recipe.  You can make this and store it in the fridge for the week.  Finely chop it and use it in cakes or what not.  Put it on toast in the morning or on a bagel with some cream cheese…Yummy!  It’s great stuff, I keep this in the fridge myself.  It really livens up a lot of dishes, including savory.  Try it with some chicken and rice or on a pizza.  It’s awesome!!

Roasted Pineapple

1c        Light Brown Sugar
1/2c    Honey
1/2c    Dark Rum
5          Star Anise
3          Cinnamon Sticks
1          Vanilla Bean
1          Pineapple

-Spread the brown sugar on the bottom of a casserole pan
-pour in the honey, rum and remaining ingredients (splitting the vanilla bean open)
-quarter the pineapple, removing the core, lay in casserole dish with peel side facing down
-bake at 350 degrees for 25 minutes, turn pineapple and bake another 15 minutes

  1. I love the idea but there’s a wee bit too much sugar involved here for me. Perhaps I could roast it in coconut oil with a little maple syrup and all those delicious spices you’ve used. And of course the rum 🙂
